With the first sip, we know you’ll want s’more of this beer! Our iconic imperial stouts Velvet Merkin and Parabola were blended and aged in Heaven Hill bourbon barrels for a year. Copious amounts of cocoa nibs, vanilla beans, and cinnamon sticks create a balanced mouthfeel reminiscing of the campfire treat.

Style: American Wild Ale

A new wild child in collaboration with Sante Adairius Rustic Ale’s, co-fermented with Blenheim apricots grown in Hollister CA, along with Santa Ynez Valley Chenin Blanc, Sauvignon Blanc and Chardonnay grapes. A beer that blazes its own trail with luscious stone fruit flavors and elegant vinous maturity. Reminiscent of an apricot mimosa, the wine hybrid side of this beer is dry and refined in flavor and then mingles with ripe apricot to finish with amazing balance.

Firestone Walker Brewing Company - Nitro Merlin
Style: American Lager
ABV: 5.50% IBU: 27.0

The new ingredient is lactose, a.k.a. milk sugar. When Velvet Merlin is brewed with milk sugar to create Nitro Merlin Milk Stout, the effect is similar to adding cream to your dark roasted coffee. The result is a stout that is still dark and roasty, but now with a mellow sweetness and added roundness of body.

Oaktoberfest is brewed using caramel malts and traditional noble hops. After primary fermentation, this year’s rendition was partially lagered in neutral oak barrels. This imparts subtle French oak flavors while keeping the beer soft and balanced.

Firestone Walker Brewing Company - Parabola (2022)
Style: Imperial Stout

Of all the beers in our Proprietor’s Vintage Series, Parabola is the most notorious. It is always a beast of a beer, with intense flavors of black cherry, dark chocolate, vanilla and roast coffee-- yet each annual release also bears its own subtle imprint. We took the extra step of aging the beer entirely in 12-year-old bourbon barrels for this latest edition. These older-stock barrels accentuated Parabola’s signature richness with vintage-specific notes of stone fruit, fudge, and tobacco.
