Who says cats can’t play banjo?! Not us! We love music and beer…and the combination of both. As a result we have seen some strange stuff here at the Shop over the years… this might not even be the strangest thing we have seen. A deceptively light and crisp body, purposely unbalanced to showcase 7 lbs per barrel of juicy and tropical hops, this double features Mosaic, Simcoe and El Dorado. Don’t let the ABV fool you or you might end up trying to teach your cat how to play banjo too… Thanks to our friend Kara Ferro for hooking us up with the awesome old timey animal paintings!

This cucumber jardin is a sour mash style with a clean, crisp sour profile. Golden and slightly hazy from one of our Belgian yeast strains, we leave this beer unfiltered for a smooth body. Featuring a half-ton of smashed cucumbers, this beer is tart and refreshing with a crisp cucumber aroma and palate-cleansing dry finish.

Gilman Brewing Co. - Freedom
Style: Hazy IPA
ABV: 7.30%

Because we are all just thinking about what‘s over the next hill.... Whether you ride or not, a little mental freedom is just 16 oz away. We hope you enjoy your escape... this IPA is hazy/foggy/unfiltered/East Coast style... whatever definition suits you. It is smooth, juicy and tropical. With a massive amount of Amarillo for tropical punch, we also decided to liberate a bunch of other hops and let some El Dorado, Idaho 7, Mosaic and Simcoe ride along as well. Don’t worry what we think about it, you are free to make your own call. We think it‘s pretty damn good though... hope you do too!

Style: Farmhouse Ale
ABV: 6.60%

Our Belgian Farmhouse is a light colored but moderate bodied beer that is made with Munich and Carsmunich malts to add to the light bodied complex taste profile of toasted bread and fruit (apricot/peach/nectarine flavors) gives way to a nice earthy flavor and refreshing dry finish from our house strain of Belgian Saison yeast. Mild/restrained hoppiness from multiple Hallertauer hop additions.

Gilman Brewing Co. - La Ferme Rouge
Style: Wild Ale
ABV: 5.80%

Fermented with 100% Brettanomyces then refermented on a ton of tart cherries, this wild, Belgian-inspired red has a medium body and tart aroma of tart cherry and earthy spice. It's original ruby red color has deepened to a dark vinous red from the secondary fermentation of the cherres. Rich malt combines with subtle tart cherry and stonefruit while the Brett brings complex earthy, spicy notes that will intensify with aging.

Gilman Brewing Co. - Missouri Lean
Style: Imperial IPA
ABV: 10.00% IBU: 150.0

A tremendously unbalanced example of the Imperial IPA, released once yearly for SF Beer Week. No barleywine here! Massive light malt bill produces a shockinglylight bodied and crispbase upon which we unapologetically dumped an ungodly amount of unsuspecting Mosaic, Simcoe, Cascade and Amarillo hops. Poor hops. At least they were drunk by the time they hit the bottom of the tank… Sit back and savor the massive tropical hop aroma. Enjoy the crisp, light malt backbonethat can’t possibly balance out the assertive, clean bitterness and the hop flavor explosion of sharp tropical fruit, juicy citrus, and some dank, dank, dank.

This incredibly juicy and exquisitely unbalanced IPA contains a ridiculous seven pounds per barrel of Idaho 7, a phenomenal hop which we over-contracted and, as we sit here looking at the magnificent shit-ton of stuff we possess, have now decided to grace you with, via this hop-bomb of a beer, so that we rid ourselves of this particular problem.

Gilman Brewing Co. - West Berkley Pilsner
Style: Czech Pilsner
ABV: 5.50%

A classic, traditional German Pilsner, no corners cut. With a nod to our German friends just down the street producing a fantastic lagerbier here in Berkeley. Soft water, German Pilsner malt, a big dose of Saaz and Tettnanger hops…lagered bright for over six weeks to allow for that classic malty smoothness to develop…. Crisp malt notes perfectly balanced against moderate, firm bitterness. Spicy and floral hop notes with a smooth refreshing finish…. What more could you want in a beer?
