A spiritual companion to a black IPA, the intention of this beer is to get the drinker to question their assumptions. This beer pours a nice golden hue, but with all of the flavor and aroma characteristics of a stout. Roasted malt and chocolate character are imparted by the coffee and cacao instead of from malt, which allows for the flavors and aromas to come through without adding any color.

This collaboration with Maplewood Brewing from Chicago came together so that we could play around with a strain of saison yeast that neither brewery typically uses and it imparts a phenolic, peppery nose that fades into fruity esters. Using Ekuanot as a late addition and as a dry hop brings out the earthy tones of the beer but helps the hop profile peek around all of the yeast character.

For this collab with Ron from Jolly Pumpkin, we decided to play to both of our strengths in creating tasty Belgian and farmhouse style beers, but with a modern twist. Citra and Mosaic were employed in the whirlpool and dry hop to give the beer a more modern interpretation with hints of pineapple and papaya accentuating the fruity characters of the yeast.

Great Divide Brewing - Wood Werks No. 4

For this release in the Wood Werks series, we brewed up a base saison that is meant to tend towards the spicier side of the style. The addition of spelt and rye further accentuate this earthy/spicy component. We then laid the beer down in a mix of merlot and cabernet sauvignon barrels for ten months, which will round out the overall character of the beer.

	Great Divide Brewing - Wood Werks Old Fashioned Style: Belgian Strong Dark ABV: 8.80% Using a subtle Belgian yeast strain to create a malty, enticing base beer, this Wood Werks offering reimagines a traditional Trappist-style dubbel. The beer was then aged in grape brandy barrels for ten months with orange peel and cherry puree. Consider it the beer version of an Old Fashioned.

The first Wood Werks release is a Belgian-style tripel artfully soured for 15 months in red wine barrels and aged on plums. This extremely limited spiced sour ale is 9.3 percent ABV and has notes of luscious stone fruit with a tart, dry finish and hint of French oak. We first brewed this beer 4-5 years ago and thought it was amazing so we knew it would be the perfect beer to kick off our new series.

The yeasts combined in this beer include a culture that Marco pulled from the dregs of bottles from famous Belgian breweries, a strain that was cultured from wildflowers collected during the DeCaliBron hike, and a Norwegian farmhouse blend. The finished product will be a nuanced and complex saison with a great malt backbone, spicy yeast character, and a hint of the orange zest and dandelions.
