Alice Blend #4 is a blend of Foeder fermented and wine barrel aged Mixed Culture Golden Ales. The 32 barrels in the blend come from seven unique vintages, ranging from as young as 28 months and as mature as 34 months in barrel prior to blending. Alice #4 boasts incredibly rich barrel character, layered tannin structure, nuanced fruit like tangerine, peach, and lychee, and a showcase of collared floral hops, all culminating in the familiar dry finish and medium-high organic acid profitable all love.

In order to accentuate the natural stone fruit qualities of Alice and our house mixed culture, we decided to let her rest for three months on 1800 pounds of whole fruit peaches at a ratio of over seven pounds of fruit per gallon of beer. Peach Alice is an intense and impressive example of peach flesh on the nose with a bright fruity flavor that remains dry and not overly acidic in order to not diminish the base beer’s overall drinkability.

The bayou is a common place to find manatees, shorebirds, and a wide variety of fish. Coffee Pot Bayou is our Maximo Milk Stout aged on locally roasted and blended coffee and espresso beans, vanilla bean, and cacao.

Hillda’s Guiding Bolt is a shockingly complex and purposefully blended Mixed Culture Sour IPA. First, we brewed a hazy pale ale hoped with Citra and Lemondrop. Then, we hand selected Foeder fermented mixed culture golden ales that had been resting in neutral wine barrels since 7/10/2019 and blended them together, creating an insanely tropical and fruity, subtlety resinous and tannic, full bodied and juicy, Citra and Lemondrop DDH Mixed Culture Sour IPA. This beer is equally acidic, hoppy, elegant, and intellectually stimulating. The intricacies of the acid profile cannot be replicated quickly, and the resulting beer provides and enhanced and elevated experience.

Green Bench Brewing Co. - Steinseifer Hefeweizen
Style: Hefeweizen
ABV: 5.40%

Straw colored German Weisse beer, brewed with a complex mash schedule that includes a low temperature ferulic acid rest, protein rest, and two decoctions. Brewed with imported Pilsner and Wheat malts, and fermented with a traditional German Weisse yeast strain, Steinseifer is full bodied and cloudy with a pillowy white head and wonderfully sticky lacing. The fermentation profile creates a mixture of clove and spice-like phenolics, with banana and vanilla cream-like esters.
