Style: Dry Hopped American Sour Pale Ale
ABV: 5.90%

To make the 12th Anniversary American Sour Pale – the Wort is soured in the kettle with Lactobacillus and then boiled with Mosaic, Nugget, and El Dorado hops. After fermentation with California Ale Yeast the beer is then dry hopped with the same three hops selected for fruity complexity. The result is a mild sweetness with prominently quenching lemony tartness and a uniquely complex fruity aroma.

We added mostly late additions of this experimental hop varietal in order to provide a nice tropical fruit aroma while keeping the IBUs in the 40-ish range. Then we headed to Stone Farms to source some passion fruit. The passion fruit we found there was mind-blowing in all aspects. After cutting open the fresh fruit and tasting the beautiful, bright orange seed-peppered juice we all had ear-to-ear smiles.

Silva Stout took a lot of patience. We aged our Double Stout in oak bourbon barrels for 17 months. Flavors are very complex. It starts off with dark chocolate truffles rolled in cocoa powder. Next is the vanilla and wood notes, with rich cherry-like fruitness. After racking and filtering the ale, we blended in just the right amount of freshly brewed Double Stout to provide the perfect balance of bourbon barrel aging and freshness. Extravagantly hopped with Simcoe, Tomahawk, Amarillo, Cascade and Centennial layered throughout the brewing process, this beer is pale copper and medium bodied.

Green Flash Brewing Co. - White IPA
Style: White IPA
ABV: 7.00% IBU: 9.5

While developing the recipe for our White IPA, we lined up malted wheat and more than a dozen hop varieties to select the three hops with the most citrus character: Simcoe, Amarillo and El Dorado. A citrus hop explosion leaps from the glass with big tangerine aromas up front, while hop flavors of bitter orange zest dominate and linger to the finish.
