	Off Color Brewing - Apex Predator Style: Farmhouse Ale ABV: 6.80% IBU: 35.0 For Apex Predator Farmhouse Ale, we pitch the yeast cold, turn off the temperature control, and let the yeast do it's thing. To our delight, it spat out the sweet scent of juicy fruit wafting from a frothy, white mane. Brewed only with grain and sugar unencumbered by the heat of the kiln, we create a hazy, golden body.

So, we made a tart wheat beer, added kaffir lime leaf, key lime, orange, and pink Himalayan salt. All it's missing is the two hour wait for the Big Star Patio. And tacos.

	Off Color Brewing - Class War Style: Smoked Beer ABV: 9.50% When vikings weren't drinking mead and pillaging, they would drink this high gravity smoked rye beer to kill time. Better that they were killing time than villagers. Our malt for gotlandsdricka is smoked over pear wood and then we add a bunch of honey to give it an extra kick in the skull.

White grapes, papaya, and guava overlay a spritzy acidity with elegant oak structure from a 13 month rest in our Barolo foedre and a subtle perfume from the koji inoculated sake rice.

	Off Color Brewing - Dinos'mores Style: Russian Imperial Stout ABV: 10.50% IBU: 40.0 When we launched BorrachaBaker made us some s'mores shaped like dinosaurs for our launch event. Then, we made an imperial stout with graham flour, marshmallow fluff, vanilla, and cocoa nibs with Amager and West Lakeview Liquors.

	Off Color Brewing - Eille Style: Saison ABV: 7.50% IBU: 15.0 Eille is a Biere de Miel, or honey beer, with floral and perfume aromas; dry but with honey notes on the finish complimenting spice oils reminiscent of gin. Pronounced 'EL-lay'

Style: Berliner Weissbier
ABV: 3.80%

Troublesome's meaner cousin will flail your tongue as hard as he can, but being such a little guy, you'll probably just pucker a bit. Spawned through an overnight kettle souring with our house lactobacillus culture, the wort emerges furious at what we did to it. Then, just because, we pitch a saison yeast and allow it to free rise to it's further distain. It comes out angrier than... uh, angrier than... well, something really angry.

	Off Color Brewing - Ghost Lemons Style: American Wild Ale ABV: 5.10% In collaboration with Allagash. First blush of summer peaches, preserved lemon and marmalade leads to a verdant, round mouthfeel of kiwi, hay, and barnyard funk. A twinge of tartness dissipates to a bone dry, slightly saline finish reminiscent of brackish water and the bucolic memories of lemons past.

	Off Color Brewing - Grown Gnome Style: Porter ABV: 9.00% Known Gnome is a throwback to when old timey porter brewers tried to avoid paying hop taxes by (illegally) using quassia as a hop substitute. Quassia is a genus of South American trees that can grow over 100 feet in height.

	Off Color Brewing - Myshka Style: Russian Imperial Stout ABV: 3.50% Russian Folktales was a collection of, well, Russian folktales put together in the same vein as Brother's Grimm work on Grimm's Fairytales. Included is The Gigantic Turnip by Aleksey Tolstoy. We honor it with this smallest, weakest Russian Imperial Stout made for us little people just trying to get along, pulling up turnips.

	Off Color Brewing - Predator Noir Style: Saison ABV: 6.20% A blend of Foedre aged wild ale and fresh saison refermented with blackberries and jasmine. A rush of blackberry seeds, peach nectar and tangerines finishes with lingering traces of soft oak, inky merlot and jasmine flowers.

	Off Color Brewing - Scurry Style: Altbier ABV: 5.30% IBU: 18.0 Just cause it's dark and German doesn't mean it's an alt. Based on the obscure Kottbusser style of beer, this surprisingly dry beer retains all the aroma and nuance of honey (from bees) and molasses (not from bees) creating a perception of sweetness through cool, controlled fermentation. Because we're sweet enough damn it.

	Off Color Brewing - Silly People Style: Gose ABV: 4.50% IBU: 8.0 Our boldest gose yet is fermented with a mixed cocktail of lactobacillus, torulaspora and brettanomyces. Notes of lactic acid, lemon juice, and grapefruit juice are balanced by a rising bread body and enhanced by a mouthful of salinity from French grey sea salt. It's basically a Salty Dog.

Style: Pale Lager
ABV: 5.00% IBU: 35.0

John likes bees. John's like of bees led him to hanging out with other people who like bees. Some of the other people who like bees work at The Field Museum. The Field Museum was opening a bistro and bar. John was opening a brewery. And that is pretty much the story of how Off Color and The Field Museum collaborated to make this crisp, clean pilsner with a dry-hopped bite far inferior to Sue's.

Off Color Brewing - Town Musicians
Style: Maibock
ABV: 7.20% IBU: 28.0

We filled our mash tun to the brim with lightly toasted German malt and balanced it with just enough German hops before a long cold lager fermentation. The resulting beer features a complete malt profile balanced mostly by a round ethanol warmth in a traditional German style perfect for days with cold mornings and warm afternoons.

Off Color Brewing - Troublesome
Style: Gose
ABV: 4.50% IBU: 8.0

We blend together two different beers to make Troublesome. The first is a somewhat uninteresting wheat beer and the second is an overly acidic & funky beer fermented solely with lactobacillus. We blend the two beers together with coriander and salt at the tail end of fermentation to create a mild, lemony tartness and a fuller sensation of mouthfeel. And yes, it's hard to make.

Off Color Brewing - Very, Very Far
Style: Blonde
ABV: 6.00% IBU: 24.0

A twist on the spirit of Belgian mixed fermentation that utilizes a non-traditional wine yeast, Torulaspora delbrueckii. Torulaspora enhances fruitiness while a classic Belgian ale yeast imparts a Belgian spice character. The Rakau/Sterling hop profile is built to compliment the fruit ester character from Torulaspora delbrueckii and spicy character from the Belgian ale strain.

	Off Color Brewing - Waddle Style: Marzen ABV: 6.50% A fest beer to celebrate the wedding of one of our favorite twenty employees! Brewed in the classic style of an Oktoberfest lager, except if you see it after October, then it is a Marzen.

	Off Color Brewing - Wari Style: Sour ABV: 4.00% IBU: 3.0 We had to import some purple corn from Peru, mill it up, spice it with molle berries and pump the beer into the closest thing we had to a ceramic vat, which is our old, beat up lactobacillus tank. What came out was a beer-like drink with a dry, grainy funk and pepper spiciness, plus it was deep purple in color with pink foam lacing.

Off Color Brewing - Wildings
Style: American Wild Ale
ABV: 6.60% IBU: 12.0

Native yeasts harvested from blueberry skins yield an aromatic cloudburst of summer blueberries, concord grapes and strawberry blossoms interlaced with supple oak and a delicate note of violets from the long rest in our handmade foeders we pulled out of a winery in the northern Italian region of Piedmont where they held Barolo for 15 years.
