This Belgian Golden Strong Ale is brewed with mostly Belgian pilsner malts and a whole bunch of Belgian candi sugar. We then added lots and lots of apricots because apricots are cool and Shakespeare called them an aphrodisiac in “A Midsummer Night’s Dream.” We’re not sure if that’s true or not, but if you look at them a certain way, they do look like a butt.

When all that’s left is Spiker and Sponge, make like James and travel by way of peach. We got all peachy in this Double IPA by adding well over a pound of peaches per gallon of beer. That’s, like, a lot of peaches. A lightly sweetened malt base balances all sorts of piney, fruity, and resiny American hops while blending perfectly with one of nature’s most ripe fruits. Peachy keen.

Unlike most super uncreative breweries that decide to showcase a new hop or something for their anniversary, we decided to showcase brewing talent. We did this by brewing one of the most difficult beers in the world (a low alcohol German lager) and making it not only extremely complex, but exceptionally easy drinking. This kellerbier is lightly hopped with German Hallertau Blanc to go with a clean malt backing of German Pilsner and light Cara to keep this clean and delicious. This lager is truly worthy of such a special occasion.

In the 1890’s, Mazzie’s Place (pronounced May-zee) was one of Lemont’s go-to establishments for liquor, gambling, and female “companionship.” This American pale ale is our modern version of go-to. We dry hop Mazzie with four different American hops to give it a West Coast identity, but a malt bill consisting of wheat and oats leave this feeling more Midwestern and familiar.

A brewer’s beer by all definitions, we brewed this Bohemian Pilsner for our brewers. With that in mind, we're happy to share this beautiful lager with you. Crafted with our reverse osmosis water, 100% Bohemian Pilsner malts, and a blend of German Hallertau and Czech Saaz hops, this crisp and clean pils shows off a soft, delicate malt backing as well as a classic, somewhat fruity, spicy, and floral hop backing. This is lagerbier at it's finest.

Pollyanna Brewing Co. - Roselare Anniversary

Unlike most super uncreative breweries that decide to showcase a new hop or something for their anniversary, we decided to showcase our brewing origins. We did this by brewing one of our favorite styles of beer. With multiple German-trained brewers on our staff, Kölsch is the only logical beer to brew for our yearly Roselare Anniversary. Brewed with German pilsner malt, a touch of Hallertauer hops, and Kölsch yeast, this beer is simple because sometimes that's all a beer needs.

Pollyanna Brewing Co. - Roselare Fourth Anniversary Doppelsticke
Style: Altbier
ABV: 8.50% IBU: 75.0

We like Altbier, so we brewed another Altbier, but made it even more Sticke! So Sticke, it's Doppelsticke! Sticke to me! A lager/ale hybrid, this big ol' traditional Altbier Doppelsticke is copper-amber in color thanks to German Pilsner, Munich, and Caramunich malts. Worthy of an anniversary, this beer is super smooth with a fresh, firm Noble hop bitterness to balance the light malty sweetness.

	Pollyanna Brewing Co. - Sweater Paws Style: Golden Ale ABV: 5.20% IBU: 15.0 This Vanilla and Coffee Blonde Ale comes in at 5.2 ABV and has Vanilla and Tugboat Coffee's Single Origin Guatemala added. Lightly hopped at 15 IBU, this beer is meant to resemble an easy drinking Vanilla Latte. No lactose was added to this beer.

In this beer lemon verbena is the scent you can smell above the smell of hops and malt. This easy drinking rustic blonde ale is brewed with pilsner malt and spelt giving it a fuller body while a light Saaz hopping provides an earthy spiciness that follows a big lemon aroma and flavor from the whole leaf lemon verbena. Enjoy this as you would a glass of lemonade on a hot day.

Picked off the vine and shipped to our brewery within 24 hours, Hop Head Farms provided us with 200lbs of wet Chinook hops in this version of an XPA. Less bitter than our other versions of the style, this beer is filled with oily hop flavors only found in wet hop beers. Expect fresh and slick hop resins with all sorts of grapefruit, citrus, and florals. Enjoy this while you can!

With all the new hops out there, it only makes sense to brew with all of them, right? Right. This year, we’re having some fun with all those unique hop varieties by brewing a few different versions of an Xtra Pale Ale. In this version, we feature Falconer's Flight and Huell Melon hops. Expect big notes of melon, grapefruit, tropical fruits, lemons, and soft florals.
