This bottle is a blend of both Brett and Sour barrels, dry hopped with a bouquet of American hops to accentuate the tropical and citrusy profile of each base beer. Wicked Weed - Angel of Darkness
Style: Sour
ABV: 11.00%

Angel of Darkness is a barrel-aged American sour. This ale is blended with 1.5 pounds per gallon of boysenberries, blackberries, raspberries and cherries and aged in Oloroso sherry casks. After 14 months of aging in these flavor-intense barrels, the beer is blended onto another 1.5 pound per gallon of these dark fruits in stainless steel tanks for 2 months. A total of 3 tons of fruit and 16 months of maturation later, we give you Angel of Darkness.

Hey, do you want a s’more? Some more what? No, no, do you want a s’more? I haven’t had anything yet, so how can I have some more of nothin’? You’re killin’ me, Smalls. To create this S’mores stout we used cacao nibs, brown sugar, honey, vanilla and chocolate which produces a wonderfully creamy and fluffy libation to sip on next to a fire on a blustery winter’s night.

	Wicked Weed - Bedeviled Style: Belgian Golden Strong ABV: 9.00% IBU: 22.0 We really focused on making a dry champagne like finish to this beer. The Belgian yeast character is the star in this ale with peppery aromas backed with a dried citrus fruit character. This beer drinks like it is 6% ABV so be careful. The name is a nod to the great Belgian Golden Strong ale Duvel which means devil.

Wicked Weed - Black Angel
Style: Sour
ABV: 7.00% IBU: 16.0

This light and fruity ale is black in color, though your palate would never know it. Black Angel is fermented on the Wicked Wild yeast and then moved into stripped down Four Roses bourbon barrels and aged on tart cherries, sweet cherries, and Italian plums. The white oak and roast malt add notes of vanilla and graham cracker that, when blended with the tart sweetness of the fruit, bring out a robust cherry pie flavor.

Tequila Barrel-Aged Smoked Sour Ale with Grapefruit and Lime Zest. Oaxacan, (pronounced wah-hah-can) begins as an amber sour ale brewed with smoked malts. It’s then laid to rest in Organic Blue Agave Tequila Barrels with grapefruit and lime zest. When the beer reaches its peak complexity, it is then blended onto additional grapefruit to lend fresh citrus essence to this barrel-aged sour.

Wicked Weed ciders pay homas to local terroir. Apple orchards checker the mountainsides of Western North Carolina, and we are proud to give this staple of local agriculture new life as cider. Our cider is fermented in our 2,000 gallon oak foeders with Brettanomyces harvested from local apples to lend a rustic, earthy, and dry character. This refreshing cider then conditions to develop complexity and depth.

Brettanomyces Farmhouse Ale Fermented with Marionberries. The childhood farm of our brewers is the source of the love of all things cultivated from soil, sweat, and hard-earned know-how. Their grandfather was a purveyor of preserves and jams made from berries and fruits that he harvested with his own hands. From this early inspiration the seed of our craft took root and grew into a philosophy of creating beer with integrity berry to barrel to bottle. Ferme de Grand-père is a foeder-aged, Brettanomyces farmhouse ale. This tart, deep amber ale was rested on over a pound per gallon of marionberries and bottle conditioned in our cellar to reflect and echo the rustic farm-style beers of old.

	Wicked Weed - Fille de Ferme Style: Farmhouse Ale ABV: 4.20% Spring stretches out before us, and our days grow longer, lending sunlight and joy to guide the work of our hands. This lightly tart ale is our homage to the rustic spirit of old world Belgian-style farm beers.

	Wicked Weed - Framboos Morte Style: Sour ABV: 5.80% This intensely red beer begins its life as Cosette Blonde Sour. We pick through our stock choosing 5-12 month old barrels and then blend onto 1.75 pounds per gallon of fresh NC grown raspberries where it re-ferments on the fruit for 2 months.

At 8% abv and who knows how many ibu'ss, this beer is our shrine to the Hop. Absurd amounts of the big West Coast hops gives this beer its citrusy, weedy nose and big, dank flavor. We dry hop with 48lbs per batch, which is over 3lbs of hops per barrel.

Glowing white fruits, deep green Genesis is brewed with over 200 lbs of Mango, Papaya, Goava and Pineapple and aged for 6-12 months in a variation of white wine barrels. Each batch is artfully blended to accentuate the tropical and wild nature of the yeast and fruit. Jungles, and indigo waters painted the landscape. Under the watchful eye of Iyapa, creation grew in complexity and depth, and thrived in the wildness.

Metatropics is a collaboration beer that flips current IPA orthodoxy onto its head. Wicked weed and Trois Dames love using hops to produce an equatorial, citrusy character, but decided to deconstruct this process to forge something new. This beer employs real pineapple, passionfruit, mango, and grapefruit to emulate tropical hop flavors. The addition of brettanomyces wild yeast takes this beer to new heights of meta-refreshment.

Hot peppers are a touchy fruit. They can very easily overwhelm a beer. We gently steeped habanero peppers into this saison and matched them with 200-plus pounds of peach purée to create a balanced pepper fruit beer. With heat in the aroma, peach on the palate, and a slight warming of the throat to finish, this ale will keep you wanting more.

Hey, do you want a s’more? Some more what? No, no, do you want a s’more? I haven’t had anything yet, so how can I have some more of nothin’? You’re killin’ me, Smalls. To create this S’mores stout we used cacao nibs, brown sugar, honey, vanilla and chocolate which produces a wonderfully creamy and fluffy libation to sip on next to a fire on a blustery winter’s night.

The use of multiple varieties of crystal malts gives this ale a huge amount of malt depth. Flavors of toffee, caramel and sugarcane bring a sweetness to the hop flavor that is hard to achieve.

Our first Valentine's Day Beer, V is 6.5% abv and fermented with 130 lbs of raspberry and cacao nibs roasted by the French Broad Chocolate Lounge. It is truly a beer for the romantic with interwoven aromas of raspberry and chocolate. With a crisp and dry finish, this fruit forward beer is not overly sweet. Perfect for a dessert pairing.

Wicked Weed - White Angel 2015

White Angel is an American Sour Ale blended with two pounds per gallon of locally harvested Muscadine and Scuppernong grapes aged in white wine barrels. After eight months, another pound per gallon of Albariño wine must is blended in stainless steel tanks for 2 months. After a total of 2.5 tons of fruit and ten months of maturation we give you White Angel.
