We enjoyed the tropical fruit notes we were getting from the Brettanomyces Bruxellenis yeast we used to make a pale ale so we made a 100% Brett. IPA. It was generously dry hopped with Galaxy hops to really accent the pineapple and tropical fruit notes that the yeast was creating during fermentation. It has a low perceived bitterness so the hops just burst onto your taste buds but the bitterness comes back in the finish leaving your pallet dry.
