Inspired by the Grateful Dead’s beloved “American Beauty” album, American Beauty Hazy Ripple IPA is an unfiltered India Pale Ale brewed with spelt – an ancient heirloom grain that contributes earthy notes and a natural haze – that’s then dosed with a special yeast variety to accentuate hop aromatics. The result is a psychedelic 7.0% ABV ale that’s bursting with notes of tropical fruit and juicy citrus, while the style callout lovingly references the fan-favorite track “Ripple.”

Inspired by the fields of Provence in southern France, Bière de Provence begins with 2-row wheat and rye malts, and Jarrylo hops. A bounty of herbs, including lavender, bay leaf, marjoram and chervil, gives it a floral and spicy nose. With a hazy golden appearance, Bière de Provence is fermented using a Belgian yeast strain lending to a sweet and malty flavor profile.

Dogfish Head Brewery - Birra Etrusca Bronze
Style: Ancient Ale

This Ancient Ale proves that beside the wine on every Italian's dinner table, there should also be a place for beer. Although Italian historians were a little reluctant to admit it, the team clearly found that the Etruscans had a taste for ale. The backbone of Birra Etrusca comes from two-row malted barley and an heirloom Italian wheat. Specialty ingredients include hazelnut flour, pomegranates, Italian chestnut honey, Delaware wildflower honey and clover honey. A handful of whole-flower hops are added, but the bulk of the bitterness comes from gentian root and the sarsaparilla-like Ethiopian myrrh resin.

For this beer, we use maple syrup from Red Brook Farm (Sam's family farm in Western Massachusetts), peat-smoked barley and vanilla. Immort is fermented with a blend of English and Belgian yeasts, then aged in the big oak tanks at the brewery. The sweet and earthy flavors meld magnificently in the Immort Ale. But be warned, the ABV is 11%.

Forget about the car companies, this is the original hybrid. A cross between a Scotch Ale, an India Pale Ale and an American Brown, Indian Brown Ale is well-hopped and malty at the same time (It's magical!). The beer has characteristics of each style that inspired it: the color of an American Brown, the caramel notes of a Scotch Ale, and the hopping regimen of an India Pale Ale.

Dogfish Head Brewery - Kvasir
Style: Ancient Ale
ABV: 10.00% IBU: 13.0

With the help of biomolecular archaeologist Dr. Patrick McGovern, we've re‐created another Ancient Ale, this time from the Nordic climes of Scandinavia. The recipe for Kvasir was developed with the help of chemical, botanical and pollen evidence taken from a 3,500‐year‐old Danish drinking vessel. The vessel, made of birch bark, was found in the tomb of a leather‐clad woman Dr. Pat says was probably an upper-class dancer or priestess. The analysis pointed to the ingredients used in this unique brew: wheat, lingonberries, cranberries, myrica gale, yarrow, honey and birch syrup. The base of Kvasir is a toasty red winter wheat, and the bog-grown berries deliver a pungent tartness. While a handful of hops is used, the earthy, bitter counterpunch to the sweet honey and birch syrup comes from the herbs.

We started with a combination of Pils malt with flaked barley, rolled oats, and malted and raw wheat to get it all hazy. Then we introduced coconuts three ways by adding toasted coconut, dehydrated coconut water and an experimental hop variety that provides a unique coconut & woody aroma. The result? This highly roasty and malty brown ale clocks in at 12% ABV. A huge hit at our Rehoboth Beach brewpub when first released in November 2006, Palo went into full production at the end of 2007. At 10,000 gallons, our Palo tank is the largest wooden brewing vessel built in America since before Prohibition (and we have two same-sized oak tanks right next to it).

An unfiltered, unfettered, unprecedented brown ale aged in handmade wooden brewing vessels. The caramel and vanilla complexity unique to this beer comes from the exotic Paraguayan Palo Santo wood from which these tanks were crafted. Palo Santo means "holy tree," and its wood has been used in South American wine-making communities.

A spruce-infused pale ale, Pennsylvania Tuxedo pays homage to the flannel-suited hunters and gatherers who dwell deep in the backcountry of north-central PA. A sessionable concoction with a grassy citrus kick complemented by the resinous conifer notes of fresh green spruce tips. A dry yet doughy malt backbone lets the hops and spruce shine while still balancing out the bitterness.

A Perry-Pils hybrid, Piercing Pils is a Czech Style Pilsner brewed with a White Pear Tea and Pear juice. Both the juice and the tea were added in the kettle during the whirlpool (after the boil) for maximum flavor and aroma contribution. The Pear fruit complexity pierces right through the spicy Czech Saaz hops beautifully, adding a gentle acidity to this pale lager that makes for a crisp refreshing sipper. A big, belgian-style Wit brewed with coriander and orange peel and fermented with Pinot Noir juice. After fermentation a fraction of the batch is aged in Oregon Pinot Noir barrels, and another fraction is aged on oak staves. The beer is blended together before packaging. It successfully marries the refreshing citrusy qualities of a Belgian-style white beer with the robust complexity of a bold red wine.

The vivid rose hue of this imperial Pale Ale comes from a combination of Munich and Caramel malts and a touch of red rice from Louisiana, birthplace of musician and collaborator Julianna Barwick. Citrusy Simcoe and Centennial feed Julianna’s love of hops, and the star of the show is her go-to ingredient: wasabi. What’s hoppy? … Wasabi. The Japanese root adds bittering and herbal notes similar to hops, with its subtle heat creeping in after the kick of carbonation.

These unique ingredients give this beer a vibrant red color, with delicious flavors of berries and watermelon, along with a tart - yet refreshing - finish.

On the surface, The Perfect Disguise looks like a straightforward Kölsch with a crisp Kölsch yeast and traditional German malts and hops, but things aren’t always what they seem. With a quick sniff and a slight sip, you’re greeted by a creamy mouthfeel and full body thanks to the addition of a unique German chit malt - the first hint that this beer may be somewhat different.

Dogfish Head Brewery - Theobroma
Style: Chocolate Ale

Theobroma is a celebration of chocolate, the food of the gods. This Ancient Ale is based on chemical analysis of pottery fragments found in Honduras that revealed the earliest known alcoholic chocolate drink used by early civilizations to toast special occasions. The discovery of this beverage pushed back the earliest use of cocoa for human consumption more than 500 years to 1,200 B.C. As per the analysis, Dogfish Head's Theobroma (translated into "food of the gods") is brewed with Aztec cocoa powder and cocoa nibs (from our friends at Askinosie Chocolate), honey, chilies and annatto (fragrant tree seeds). It's light in color, not what you expect from your typical chocolate beer (not that you'd be surprised that we'd do something unexpected with this beer!).

A great summer sipper, you can taste the fresh cucumber and cantaloupe garden party happening in this crisp Farmhouse ale! Brewed with a ton of ingredients ... no really, a ton! 300 lbs. of cucumbers and 2,000 lbs. of cantaloupe were peeled, seeded, chopped and puréed by our brewing team ... talk about a labor of love! The result is a dry and refreshing saison, with a sligtly tart finish.

Celebrating the magic at the intersection of art and ales, our annual Off-Centered Art Series is a chance for our brewers to take a walk on the wild side and with our latest innovation, that’s precisely what they did with ‘Where the Wild Hops Are!’ This unfiltered, rustic IPA is brewed with four wild-derived hop varieties that include Zappa, Amarillo, Comet and Sabro. It’s then blended with a touch of barrel-aged wild ale that’s been aged for four years in French Oak barrels. The result is a complex blend of citrus meets dank, that’s rounded out by a touch of wild. With each sip, you’ll be greeted by dry, oak-tinged finish. With artwork imagined by our 2022 Art Series artist Max Mahn, Where the Wild Hops Are features a wild creature was able to sneak in, take a giant bite out of the hop, and get away scot-free!

Our Wood-Aged Bitches Brew is a fusion of three threads of Imperial stout aged on oak and one thread of Tej - a native African honey beer - aged on Palo. The result is a roasty brew chock full of aromas of vanilla, licorice and chocolate, while you’ll find notes of sweet roast coffee with every sip. It’s slightly dry in the mouthfeel with a mild bitterness that make it the perfect sipper.
