We started with a strong foundation of Pilsner and Munich malt giving a light biscuit character that sets the stage for a hop duo worthy of finding the elusive Tanooki suit in World 4. Hallertau Mittelfrüh and Mandarina Bavaria enter the game in both the whirlpool and dry hop. Hallertau Mittelfrüh delivers that classic noble profile, creating floral, herbal, and softly spicy notes. Mandarina Bavaria powers things up with bright tangerine peel and orange blossom notes, bringing a citrus sparkle that feels like grabbing a Super Star at just the right moment. The result is a restrained yet expressive pilsner

Inspired by the traditional German Vienna Lagers, we used German malts and saaz hops with a 3 step mash to create a lager where each sip unfolds with smooth layers of toasted bread crust, delicate caramel, and a whisper of honeyed sweetness. The Saaz hops lend a subtle floral spice and a crisp, earthy finish.

This wild ale was conditioned over lemongrass, hibiscus and freshly toasted coconut. The lemongrass and hibiscus create a bold, bright, citrus tart character while the toasted coconut creates a subtle sweetness to cut the tartness creating a refreshing pacific inspired beer.
