Style: Belgian Pale Ale
ABV: 6.80% IBU: 35.0

A Pilsner malt base provides a nice toasty flavor with hints of caramel and enough fermentable sugar to make this a rather substantial beer. The Belgian-Style Pale Ale is brewed with Magnum, Cascade and Citra hops in the brewhouse and then dryhopped with a blend of Citra and Cascade. This drives home the aromas of fresh citrus rind to make this a very drinkable and extremely aromatic beer.

This Blonde Honey Doppelbock has moderate bitterness, mixed with a high ABV. Pronounced but balanced fresh honey flavor and aroma balance the malt sweetness and light floral and citrus aromatics. The name comes from “Apiary”, a place where beehives are kept, and “-ator”, the classic naming scheme for the Doppelbock style.

If you want oak, you've got it. This Robust Porter was fortified with tart cherries prior to fermentation, lending a moderate tartness and restrained fruit flavor. A 20-month stay in Woodford Double Oak barrels brought a massive American oak tannin profile and a pronounced dry finish. Think chocolate-covered, bourbon-soaked cherries served in a wood shop – in a good way.

We utilized 2-row, Pale Ale, Red Wheat and Belgian Aromatic malts to provide a deep golden color and clean malt profile for this hoppy ale. Multiple additions of Citra in the brew kettle infuse this beer with deep layers of citrus aroma and flavor and a clean, crisp yet intense bitterness. After primary fermentation with our English Ale Yeast we dry-hopped with one pound per barrel of Citra to give this ale a burst of fresh citrus fruit.

Our Eugene Porter was sent to a bright tank and aged for an additional week with whole bean coffee from Dark Matter Coffee. The cold-aging allows us to extract the aromatic oils from the coffee without extracting any additional bitterness that it may impart if we were to have added it to the near boiling wort in the kettle.

Our version of an Irish Dry Stout has a deep intense roasty character and acidity. We used Apollo, Warrior, Crystal, Cascade and Amarillo hops in the brewhouse to achieve an intense but clean bitterness and aromas and flavors of fresh flowers and citrus juice. Near the end of fermentation we dry-hopped this beer with Mosaic, Citra, Crystal, and Sabro to infuse this IPA with notes of coconut, pineapple and freshly grated citrus rind!
