1320 is an experiment in the burgeoning New England-Style of brewing IPAs, incorporating manipulation of brewing water chemistry, extremely late kettle hopping using tropical and fruity hops, and use of non-traditional yeast that accentuates the tropical and fruity hop character. With a chewy mouthfeel, juicy tropical stone fruit throughout, and a clean and slightly dry finish that keeps begging for another sip.

Mixed culture brett beer. This beer features an array of Yeast and bacteria; Brettanomyces Claussenii, Lactobacillus plantarum (harvested from good belly probiotic drink), Pediococcus Damnosus, Saccharomyces Cerevisiae. After fermentation lemons, chamomile, juniper berries and lemongrass were added to create a "gin inspired" sour ale.

Our take on the Brut IPA style utilizes a wild strain of saccharomyces (now domesticated) known to produce huge tropical fruit aromatics and flavor compounds. This yeast strain was chosen to lay the foundation for a dominant tropical fruit profile, while backing these characteristics up with a complementary hop profile of Simcoe and Citra hops at a rate of 2.6 pounds per barrel.

Hazelnut is more prevalent than the almond, mostly sweet on the mouthfeel but finishes with a slight robust flavor. Not heavy but slightly dry on the finishes. No noticeable bitterness, and slight roast on the nose followed by the smell of hazelnuts. The almond note is to round out the hazelnut flavor from being too overpowering.
