2 Towns Ciderhouse - 2010 Pommeau
Style: Apple Wine
ABV: 19.00%

Our Pommeau is made from locally grown traditional bittersweet cider apples which are hand-harvested and ‘sweated’ at cool temperatures. After the apples have sweetened, the fresh-pressed juice is lightly fermented and then aged with Clear Creek apple eau de vie. Our Pommeau is then matured in French oak barrels for one year. The result is a tremendously complex apple Pommeau that blossoms with aromas of fresh-pressed cider, dried fruit, and wood. This bottle will improve with cellaring for up to 20 years.

Style: Barrel Aged Apple Wine
ABV: 19.00%

To create the Pommeau 2 Towns press Dabinette, Porter’s Perfection, Kingston Black and a variety of other apples for a robust blend of juice that’s high in fermentable sugars and rich with complex tannins. We then take the blended juice, lightly ferment it, transfer it to oak barrels, fortify it with apple brandy and age it for over a year. We use brandy distilled from our own cider and age the Pommeau in barrels previously used for chardonnay, pinot noir, sauterne, muscat and brandy.

Fermented in Pinot noir wine barrels, the apples and honey for this un-fined, un-filtered, un-pasteurized cider are grown and handpicked at Afton Field Sustainable Farm. Located in Corvallis Oregon, only six miles from our cellar, Afton Field grows their food naturally in harmony with the land. Enjoy this tangy farm-style cider with local pork and cheese.

Radiant and balanced, BrightCider shines with Newtown Pippin apples, the pioneer variety that defined the cider palate of the Northwest. BrightCider is made with a blend of Newtown Pippin heirloom apples and other Northwest varieties. The Newtown Pippin was the apple which defined the palate of new world ciders. Colonists found this apple so remarkable that Thomas Jefferson himself wrote from France during his travels " they have no apples here to compare with our Newtown Pippin." The BrightCider is fermented cold to slow the fermentation process, retaining the aromatics of this heirloom fruit. The result is our tribute to American heritage cider with a modern Northwest twist.

Style: French Oak Aged Cider
ABV: 9.00%

This French style cider, made using all traditional French cider apples, including Medialel D'or, Muscadet de Bernay and Muscadet de Lense, is slow fermented using a processes called keeving. Starting with fully ripened bittersweet fruit, the apples are sweated, crushed and pressed, then the juice is fermented, using the natural yeast from the apple skins. The keeving process removes the majority of the nutrients for the yeast and thus greatly prolongs the very slow fermentation for up to one year. When finished, this cider is rich, thick and brimming with overripe apple aromas. Aged in French Oak.

To create the Pommeau 2 Towns press Dabinette, Porter’s Perfection, Kingston Black and a variety of other apples for a robust blend of juice that’s high in fermentable sugars and rich with complex tannins. We then take the blended juice, lightly ferment it, transfer it to oak barrels, fortify it with apple brandy and age it for over a year. .

Not for the faint of heart, this newest addition to our speciality line up is a beautifully done "West Country Replica", harking to English Ciders of the past. At 6.9%, this complex cider has all the notes of an English cider with the phenolic aroma of bittersweet and bittersharp apples such as Kingston Black, Porter's Perfection, Dabinette and Yarlington Mill. Wild fermented, barrel aged, and is very dry.
