Continuing our exploration on the base of our bold American Imperial Stout infused with cold-brew coffee, we are proud to present Coconut PM Dawn. This batch utilizes our new Trillium blend cold brew from Barrington. Like our previous PM Dawn variants, we slightly dialed back the coffee ratio to allow the heavy dose of coconut to balance the beer and perfectly accentuate its flavor profile. Coconut PM Dawn presents a dark chestnut brown color with khaki head and lacing. Bold, freshly roasted dark coffee aromas swirl to the nose accented by notes of sweet shredded coconut, toasted graham cracker, caramel and chocolate chips. On the palate, cold brew derived flavors of roasted hazelnut and melted dark chocolate interweave with a bright coconut profile calling to mind macaroons, Mounds bars, and Caribbean sugar cake. As with all of our PM Dawn variants, Coconut PM Dawn offers a medium to heavy body with a luscious mouthfeel and a light bitterness for a balanced and smooth finish.

Our flagship American IPA highlights the distinctively aromatic Australian Galaxy hop. The nose bursts with pine, citrus rind, melon and pineapple. Pronounced flavors of peach, clementine, and tropical fruits are accentuated with moderate bitterness and balanced by a light, biscuity malt character. Daily Serving was born out of our desire to express intense, saturated fruit character in beer form. After thoughtful experimentation with Permutation 6.47 and 6.51, we found that a base recipe similar to the German Berliner Weisse style, with its delicate, yet fluffy mouthfeel and even-keeled acidity is the perfect foundation for robust fruit additions.

The second beer in the series takes us to The Riverway, a 34-acre park that serves as a border between Boston and neighboring Brookline. Dual-hopped with two favorites from the Pacific Northwest, Citra and Mosaic each display their distinct tropical traits. We taste orange sherbet, meyer lemon, and juicy peach. A gentle sweetness that never nears cloying is embraced by a refined bitterness rounding out each sip.

The Emerald Necklace series tells a foundational piece of the Trillium Brewing story. If you’ve visited our home of Boston, you’ve likely encountered and enjoyed a section of the Emerald Necklace. Beginning downtown at the Boston Common and Public Garden, extending out to Back Bay, and all the way to Dorchester, this 1,100 acre, seven-mile-long public park system is a cherished green oasis in the heart of the city. Hopped with the incredibly vibrant and aromatic duo of Mosaic and Galaxy, this beer is profoundly tropical. Intense notes of fresh stone fruit, mango juice, pineapple, and pine dance across the palate. Pillowy soft with a creamy mouthfeel and dry finish, DDH The Fens is a joy to drink.

This is the Trillium version of this beer. We’re stoked to collaborate with New Zealand-based Garage Project on our third beer. Matakitaki Valley Double IPA. Pouring dark yellow and hazy, this beer features Nelson Sauvin and Motueka hops from the Matakitaki Valley on the edge of Nelson Lakes National Park on New Zealand’s South Island. Tropical aromas of passion fruit and candied lime showcase these stellar hops from one of the newest and most exciting hop growing regions.

We decided to go beyond our comfort zone to craft an immensely complex Imperial Stout that landed at 12.7% abv. Then came a balanced addition of Madagascar Bourbon vanilla beans and subtle hint of green cardamom to accent a liberal dose of cold brewed medium roast Barrington Gold coffee.

Trillium Brewing Co. - Skimpy Sparrow

An easy drinking hoppy American pale ale, Skimpy Sparrow is another edition in our "Small Bird Series" of lower ABV offerings brewed for the summer. The nose is an intense, complex fusion of pineapple, grapefruit pith, and woodsy hop aromatics. Citrus rind, grape jam, and lemon fill out the flavor profile, with a firm and long-lasting bitterness. Very dry and effervescent, light to medium bodied.

Sunrise Valley is a double IPA brewed with the folks from Garage Project, and featuring Freestyle Farms’ Rakau and Nelson Sauvin varietals. The name pays homage to the beautiful little corner of the world that these hops were born in. Pouring a noticeably hazy golden yellow straw, Sunrise Valley lifts mouthwatering, dank aromas of citrus rind and bright tropical fruit. Lively flavors of white grapefruit, lemon peel and orange pith take the lead on the palate alongside complementary notes of ripe pineapple and mango. With a modest biscuit malt backbone and a pleasant floral bitterness, Sunrise Valley has a clean and balanced finish.

Pouring a hazy, orange juice-colored golden yellow, Trailside is a fine-tuned take on the classic citrus-meets-tropical Trillium profile. Keeping an eye toward new possibilities with Strata, while retaining the core elements of what works best in Citra, the aroma is a stunning display of smile-inducing hop saturation. Fresh-peeled clementine, tangelo, and candied Meyer lemon notes are complemented by overripe pineapple, mango nectar, and fuzzy peach. Its juice-forward, no doubt; but an underlying ruby red grapefruit bitterness keeps us reaching back for more.

Trillium Brewing Co. - Vicinity

Originally brewed in celebration of the first anniversary of Row 34, our favorite Fort Point oyster bar and craft-beer purveyor, Vicinity highlights a neighborhood collaboration of passion and vision. The beer's appearance is a yellow straw-color, with a significant haze. Heavy citrus aromas of pineapple, orange flesh and mango dance on the nose and palate. The pilsner malt provides a medium body and wraps up each sip with a slight balancing bitterness.
