With help from the Oregon State University’s hop breeding program, they have developed a juicy/ fruity/ danky hop named “X331”. We put it to work on our pilot system as a single hop ale. Orange/ Melon/ Apricot aromas and flavors dominate this one-of-a-kind DPA.

Style: Double IPA

Prunus Avium - the scientific name for ‘sweet cherry/ bird cherry’. Very appropriate for a hop flavor forward IIPA brewed by Lark with a sweet cherry flavor at the forefront. Part of our experimental hop series- ‘Otto Supreme’ hops where used in the boil, and a 1 ounce per gallon dry hopping ratio of Equinox hops, This ‘candied fruit’ flavor profile balances a light bitterness with massive hop flavor. “Michigan Copper” is a new hop on the market. Leading with a big stone fruit flavor, we produced a single hop pale ale to put it to the test. Dry hopped with 2 lbs + per barrel, this hop is the shining star. A “Lone Wolf” so to speak. Heavy handed with Maris Otter, Vienna, Oats, and Wheat, it is as smooth as it comes. “Fighting, Loving, Killing, there is no-one like McQuade!”

Our head brewer has been accused of making “soft” IPA’s. We have nicknamed him “bitter pansy”. His response is this IPA, loaded with Citra, Equinox, and Simcoe hops. Presenting with the signature Lark fruit-forward flavor and aroma, but followed up with a west coast style bitter finish, there should be no more reason for name-calling.
